I understand that not everyone likes the usual cakes or cookies or frosting goodness like me. As I mentioned in my Blueberry-Lemon pound cake post, my husband enjoys other pastries like pies, muffins, and cheesecakes. So when my friend Renita gave me the idea of making cheesecake cupcakes, I jumped on it! I like cheesecake, and I LOVE cupcakes, so blending the two wasn’t a problem.Then the brainstorming began! What tastes/flavors would make a cupcake taste like a cheesecake? What elements are necessary to have in a cheesecake? Of course there’s the graham cracker crust, the use of cream cheese, the incorporation of some kind of fruit or confection like chocolate. Finally I decided to make strawberry cheesecake cupcakes. Before I started baking I did some research to see if anyone else has done it before, and of course it’s been done. But I ran across one recipe from Joylicious that I couldn’t resist trying.
