Gin & Tonic Cupcakes

I LOOOOOVE these cupcakes. I think these are the best cupcakes that I’ve made! I’m not even a huge fan of gin, but these turned out so amazing. I’ve made these cupcakes on two different occasions and the second time turned out to be even more amazing. I’m going to have to figure out what recipe I used the first time, but the second time I made gin & tonic cupcakes I tweaked the recipe to be my own.

First time making them with green tinted frosting.
Second time making the cupcakes with grated lime zest sprinkled on top.

Recipe adapted from How Sweet It Is blog.

3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup unsalted butter, at room temperature
1 3/4 cup granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 1/2 tablespoons freshly zested lime rind (about 2-3 limes)
1/4 cup gin
1/4 cup milk or tonic water
Juice of 1 lime (or 1 tbsp of lemon juice)
Gin Glaze
1 1/2 cups of confectioners sugar
2-4 Tbsp gin
Juice of 1 lime or lemon (3-4 Tbsp)
Gin Frosting
2 1/2 cups of confectioners sugar
2 – 4 Tbsp of gin (I may have added a bit more)
1 tsp of vanilla extract
*I also added 1/2 cup of butter
*Juice of 1 lime

These were so yummy. I think the tangy flavor of the lime really made me enjoy these. The second time I made them I added more gin in the frosting as well.
